There is something just so homey and comforting about a homemade biscuit. As someone who grew up mostly in the south, and with a mother that grew up in the south, biscuits have always been a comfort food. Whether they are smothered in gravy, topped with an apple butter we purchased from a local orchard, or just store brand jelly, the butteriness and crispiness of a biscuit brings me right back home. Having moved out of the south and away from home, my serendipitous opportunities for biscuits have greatly decreased, so it was high time for me to make my own recipe. These drop biscuits are a low effort, but high reward, way to eat comfort food!
Yield: about 12 biscuits
Ingredients
- 2 cups flour
- 6 tbsp butter
- 1 tbsp baking powder
- 1 tbsp sugar
- 1 tsp salt
- 1 cup milk
Instructions
1. Preheat the oven to 425 F. Put butter in the freezer for 5-10 minutes, or while prepping other ingredients.
2. In a medium mixing bowl, combine flour, baking powder, sugar, and salt.

3. After butter has been in the freezer for enough time to firm up, chop the cold butter into small pea-sized pieces. The smaller the better. If the butter starts to melt, place it back in the freezer to firm up again before continuing.

4. Fold the butter pieces into the dry mixture. Once combined, add milk. Stir the mixture gently until fully incorporated. The mixture should be sticky and slightly wet. If it’s too dry, add a little more milk until it reaches the appropriate consistency.

5. Scoop mixture into palm sized balls and place on a greased or parchment paper covered cookie sheet. Arrange biscuits evenly.

6. Bake for about 12-15 minutes or until the tops of the biscuits are golden brown.
