I first started making this recipe when I was in college and wanted a sweet treat to end the day. After spending long days in class and studying, I wanted something simple, made with ingredients I already had at home. I didn’t want to make a trip to the grocery store for just one thing. The pure creativity of laziness is what inspired these four-ingredient cookies. When eaten fresh out of the oven, yes they will burn your mouth, but they will also warm your heart. The melty chocolate chips are indulgent and the peanut butter flavor is rich. All is made even better with the knowledge that this recipe won’t break your bank.

Yield: 12 cookies

Ingredients

  • 1 egg
  • 1 cup of sugar
  • 1 cup of peanut butter
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350 F, and line a baking sheet with parchment paper or with nonstick spray.
  2. In a large mixing bowl, whisk one egg. Add peanut butter and sugar, and mix well until combined. Fold in chocolate chips.
  3. Use a cookie scoop, a spoon, or even just your hands to form dough into balls a ½ in diameter. Evenly place on cookie sheet.
  4. Lightly press a fork into each cookie dough ball to make the signature peanut butter cookie cross hatch pattern.
  5. Bake for about 6 to 8 minutes or until cookies have browned. Let cool and enjoy!
